(Sorry to bring you another banana item so soon, but the cupboard was bare and the only fruits we had were frozen bananas.)
1 cup old-fashioned oats, ground fine in coffee grinder
1/2 cup brown rice flour
1/4 cup tapioca flour
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon cloves (more or less)
Mix together all dry ingredients.
Add the following:
1 ripe banana, mashed
1/4 cup olive oil
1/2 cup soy milk (or other non-dairy milk)
squirt of agave nectar
Mix briefly to incorporate. Spoon into muffin cups; bake at 350 degrees for 15-20 minutes.
